 About the Crop

Pistachios grow on small deciduous trees belonging to the species Pistacia vera. These trees thrive in arid and semi-arid climates with long, hot summers and cool winters.

Pistachios have been cultivated for over 6,500 years and, along with almonds. Today, they are consumed raw or used for culinary purposes pistachio trees are renowned for their resilience and longevity, taking around 5 to 7 years to reach maturity and up to 10-14 years to achieve peak productivity. Mature trees can remain productive for decades.

The nuts grow in clusters and are enclosed in a hull. As they mature, the shell naturally splits open — a characteristic sign of ripeness. After harvesting, pistachios are hulled, dried, and graded based on size, shell split percentage, kernel colour, and defect levels.

The degree of natural shell opening and kernel colour plays a major role in determining commercial grade.
