About the Crop
The cashew tree (Anacardium occidentale) is a tropical evergreen plant capable of reaching up to 14 meters in height, while commercially cultivated dwarf varieties grow to approximately 6 meters and are preferred for earlier fruiting and higher yield cycles.
Cashew nuts develop beneath a fleshy fruit known as the cashew apple. After harvesting, the nut is separated, dried, and shelled. Depending on the product style, the thin brown skin (testa) may either be removed or retained.
In this variant, the skin is preserved during roasting to maintain structural integrity and enhance fibre presence.
Grading occurs after shelling and drying, based on kernel size, integrity, colour, and moisture content.
